Sorry, it has been so long since I have posted a new recipe on here. Life has been so busy lately that I just have not had the time to post. However, fret not I have been cooking up a storm and taking tons of pictures, so look forward to many new posts soon.</div>

I know I always say "this is my go-to" recipe, but I really do have a small stack of recipes that when I am in a pinch I pull one out. Since it is still pretty cold here we do soups for dinner at least once if not twice a week. Something about a warm bowl of soup and a slice of fresh baked bread just make all the cold melt away. This recipe is creamy, cheesy and hearty, not to mention it is very easy to make.</div>

Broccoli Cheddar Soup</h2>

<li>1 tablespoon melted butter</li>
<li>1/2 medium chopped onions</li>
<li>1/4 cup melted butter</li>
<li>1/4 cup flour</li>
<li>2 cups half-and-half cream *I didn't have it on hand so I used Vit D milk.. turned out great!</li>
<li>2 cups chicken stock</li>
<li>1/2 lb fresh broccoli</li>
<li>1 cup carrots, shredded</li>
<li>1/4 teaspoon nutmeg</li>
<li>8 ounces grated sharp cheddar cheese</li>
<li>salt and pepper</li>

Start by sauteing the onions in a 1Tbsp of butter. When the onions are tender remove them from the pan and set them aside. Now add the 1/4 cup of butter and the flour. Whisk the flour mixture together for 3-5 minutes. </div>

Now stir in the half and half and the onions followed by the chicken stock. Allow to simmer on medium-low for around 20 minutes.</div>

After the 20 minutes, Add the carrots, broccoli, and spices. Allow this to cook for an additional 20-25 minutes over low heat.</div>

At this point you can puree the soup in a blender, however I find the broccoli is tender enough at this point that you really don't need too. A few minutes before serving add the cheese.<br />

3 Tbsp Parsley ( I use dried parsley but if you have fresh use 1/2 cup chopped)</div>

2 Tbsp Sweet Basil</div>

<li><div style="text-align: left;">
1/8 tsp Thyme</div>

Now the marinara is ready but I am not a huge fan of chunky marinara so I whip mine through a food processor until its smooth and then jar it up.</div>

Who doesn't love having sweets for breakfast? I know I will always jump at the chance to have something sweet and chewy for breakfast. These are a great choice for on the go healthy breakfast alternatives. Tell your kids it's a breakfast cookie and all they think is "sweet, a treat for breakfast" but you'll feel great because it chalk full of bananas, applesauce and oats.</div>

I feel like such a bone head for not taking a picture of the best part of this recipe but to be perfectly honest with all the little helpers I had it would have been a challenge even if I had remembered. With the handle of a wooden spoon you want to poke several holes all over the freshly baked cake. Make sure to go all the way to the bottom of the cake pan. Next mix up the pudding and the 4 cups of milk. Once that has reached a thickened state, pour over the "holy" cake, making sure to get into all the holes. I like to take my wooden spoon and gently press the pudding over the holes just to make sure its in there. Now place in the refrigerator for at least 2hrs.<br />

Okay so this is a super simple recipe. Place your chicken in a greased crock-pot. Pour dressing and water over the top and set on Low for 6-8 hours. When completely cooked, shred and return to the sauce in the crock-pot. Now construct your salad. I like to do lettuce, chicken, oranges, rice noodles, and then top off with a little more dressing. Anyway you do it it is sure to be a hit!</div>

In a large bowl mix sugar, yeast and milk. Allow to sit for 5 min. Next mix in the vanilla, cinnamon, eggs, butter, and salt. It won't look very pretty but it will taste so yummy once it is baked.</div>

Mix in the flour until it is no longer sticky. Allow the dough to rest in a warm place until the dough has doubled in size. This is the part where I like to cheat a little, I preheat my oven to 200 degrees F and then turn it off once heated and place the dough in the oven. Using this method the dough has usually doubled in an hour.</div>

This next step takes a bit of finesse, but roll the bottom edge of the dough up to the top so that you have a long log of dough. Then taking a serrated knife cut 12 equal pieces, depending on the size of your log. Mine tend to be about 1 1/2- 2 inches thick.</div>

The snow is falling outside and I have two sickies in my house so, when it comes time to figure out what's for dinner, my first thought is Chicken and Noodle Soup. Now I have tried so many different recipes for this but have ultimately come up with my own concoction that I love. The broth is so flavorful that I could honestly just drink that rather than eat the veggies and chicken. Hope you love it as much as I.</div>

Remove chicken and shred. Return to the pot and add carrots, celery and yellow squash. Allow to simmer for an additional 30 min.</div>

Next mix in salt and flour. When well mixed, roll out the dough onto floured surface. Roll the dough into a rectangle and then roll lengthwise and pinch the ends under. I slit the dough with a serrated knife to make it look pretty.</div>

Let rise for 30 min and honestly, keep an eye on it because it really does rise quickly. Place into the preheated oven and bake for 15 min. Around the 8 min mark pull the bread out and brush melted butter on the top, then allow to bake for the last 7 min.<br />

This is a super easy recipe, it's hard to mess it up. Cook the pasta according to the box. Drain pasta and place into a large bowl. Next dump in Alfredo sauce, marinara, and mozzarella. Mix well so that each noodle is covered in saucy goodness.</div>

Now take the tomato soup and spoon some over each meatball until they are completely covered. Then add the water to the casserole dish in between the meatballs.<br />

My most recent party treat were these super yummy ooey gooey German Chocolate Brownies. When you need a bit of a chocolate fix and don't want to experience the death by chocolate affects from most brownie mixes this is a great option, just enough sweet frosting to mellow out the rich chocolate brownie.</div>

Pour batter into pan and place in the oven for ~ 35 min. Depending on your oven you can check if they are done by placing a toothpick in the middle, if done it will come out clean. Be careful not to overcook as you don't want chocolate bricks.<br />

So after being hopelessly addicted to <span class="blsp-spelling-error" id="SPELLING_ERROR_0">Pinterest</span> for recipe ideas I was inspired to bite the bullet and do some freezer meals. I have always wanted to do a months worth of cooking in one day, so on those days that I really don't feel like cooking I could just grab something yummy and homemade out of my freezer. I gathered as many family favorite recipes that I thought would be good to freeze and made a huge grocery list. <span class="blsp-spelling-corrected" id="SPELLING_ERROR_1">Initially</span> I sort of had a heart attack about the mass amounts of food I was needing to buy, but honestly its a months worth so it should be <span class="blsp-spelling-error" id="SPELLING_ERROR_2">a lot</span> for a family of 6. The day before shopping I checked out the store adds to make sure I was getting the most for my money and the few weeks before <span class="blsp-spelling-corrected" id="SPELLING_ERROR_3">Thanksgiving</span> is a great time to do this. I ended up buying the majority of my produce and meat at <span class="blsp-spelling-corrected" id="SPELLING_ERROR_4">Sam's</span> Club <span class="blsp-spelling-corrected" id="SPELLING_ERROR_5">because</span> their prices were as good if not better than the stores sale prices. I cooked all 7lbs of hamburger and placed each pound into a freezer gallon bag. Then I cooked the 6lbs of chicken in my <span class="blsp-spelling-error" id="SPELLING_ERROR_7">crockpot</span> then shredded and divided into bags. I had planned to get the pancakes and muffins baked this day also but it was just to crazy so I actually did it another day.

The third day was the longest day by far but has been so worth it thus far. I tried to organize my groceries as to make the <span class="blsp-spelling-corrected" id="SPELLING_ERROR_8">process</span> smoother (i.e. canned beans, other canned items, seasonings, veggies, <span class="blsp-spelling-corrected" id="SPELLING_ERROR_9">etc</span>...). When all the other girls arrived to my house we got started. We started off with the ground meat recipes and moved through the lists. One by one bag were filled with yummy food and my counter was filling up with finished meals. The whole process seemed to take forever but we were stopping to pick up kids from school and eat lunch. I think minus those activities it would have taken 4-4.5 hours straight to finish.

So now for anyone who wants to try out my recipes here they are along with the grocery list above. The highlighted ingredients are not to be put in the freezer bag but are to be added when you are preparing the meal to eat. So far I have used a handful of meals and they've turned out great. Feel free to modify the recipes such as used minced dried onion instead of real chopped onion or <span class="blsp-spelling-error" id="SPELLING_ERROR_11">pre</span>-minced garlic instead of hand mincing garlic. Let me tell you my house smelled of onions and garlic for a few days :)<br />

However, recently our little family has been trying really hard to eat a bit healthier so, we've been trying to substitute white rice for brown but in all honesty Mexican rice just doesn't taste right with brown rice. This led me to the thought of trying quinoa as a substitute. It turned out great.</div>

Bring to a boil and then turn down to a simmer and cook for 15 mins. When the liquid is all absorbed dump in the salsa, garlic salt, and cumin. Continue cooking another 3-5 mins until the salsa liquid is absorbed also.</div>

Preheat the oven to 375 degrees F and either grease a muffin pan or use paper muffin liners.<br />
Now place the oats and milk in a small bowl to soak. <br />
In another bowl, this is usually my KitchenAid mixing bowl, mix sugar and butter, then add bananas, eggs, and vanilla. Mix well. <br />
In yet another large bowl mix together all your dry ingredients, salt, cinnamon, nutmeg, baking soda, baking powder, and flour. I know a lot of bowls but it just makes sure all the flavors are evenly mixed.<br />
Finally add the oat mix to the banana mix and stir well. Then slowly add the flour mixture in so that everything is evenly incorporated. <br />
Last but not least toss in the chocolate chips and give it one final stir.<br />

Now for my favorite part, filling the pan and baking the goodies. Years ago I bought a large cookie scoop and can I just say how easy it makes life when trying to bust out muffins or cupcakes. Use whatever you've got to fill the pan and place in the oven to bake for 20 minutes. The tops will be nice and golden when done. Allow to cool for a few minutes and then grab a glass of milk and devour before someone else does.<br />

Recipe makes 24 muffins. These muffins freeze great, so for busy families make a double batch and put some in the freezer for those unexpected hectic mornings. Start by dissolving the sugar and yeast in the warm water in a large bowl. I am still perfecting my bread making skills so I usually resort to my good ole' KitchenAid mixer. When the recipe calls for warm water I typically turn on my faucet to hot water and then turn it down until it is at the tempurature that I can keep my finger under the water for several seconds; I know so technical. I believe the exact temp it should be is between 110- 120 degrees F. Let the mixture sit for about 10 min until it is foamy.</div>

Once the yeast looks like this it is time to add the other ingredients. Start with the melted butter and then add the salt. After they are incorporated to the yeast slowly add the flour. Since I use my KitchenAid, I use the low mix speed with the paddle attachment. When the dough starts to pick up all the remaining flour from the edges of the bowl and is forming a ball around the paddle I stop the mixture and get ready to make my breadsticks.</div>

Start by greasing a cookie sheet. Pull off pieces of dough and roll out into strips. Now let me just say I have somewhat more left to be desired in the art of breadstick making as mine typically look like small loaves, so don't fret if they are not perfect. Once all the dough is rolled set aside in a warm place to rise for about 45min. I like to preheat my oven to 200 degrees F then turn it off and add a small bowl of hot water to give my bread ideal conditions.</div>

After 45 min is up, its time to preheat the oven to 400 degrees F. If your doing my method of letting them rise in the oven, remove them before preheating to 400.</div>

Place in the oven for 7 minutes. While they are cooking make the butter topping mix of butter, garlic and salt. After the 7 minutes are up pull the rack out and brush the top of the breadsticks with butter, then return to the oven for another 6-8mins. Watch for the tops to turn a golden brown. When they are done cooking pull them out and do another brushing of the butter mixture and they are ready to eat.</div>

As much as I would like to be like those other food blogs where ever step has a picture, I am a busy mom making dinner as I help my kids finish homework and pack their lunches for school, so unless it is a step that is hard to explain or needs a particular look before progressing don't hope for lots of pictures. Okay, once the meat is cooked it is time to add all the other ingredients EXCEPT the pasta. Mix well and cook covered on low-medium (slight simmer) heat for 1 hour. </div>

Now the reason I don't throw the pasta in is because the noodles will soak up all the juices and then you'll end up with a thick stew and mushy pasta. The solution to this is a fun little trick that I learned from purusing Pinterest. After about 50 min get a seperate pot of salted water boiling on the stove. Add your pasta and cook until Al dente (~11 min). Once drained you can add the pasta to the finished soup or you can dish the pasta into the bowls first and top with the soup; This is great for kids who like my oldest son really dislikes beans but loves noodles, so he gets more noodles than others.</div>
